It’s not often that I purchase bone-in meats, but when I do, I am reminded of just how delicious and moist the bones make the overall taste. Plus, my frugal nature can’t pass up a good buy, and I often see Chicken Thighs marked ridiculously low at a fraction of the cost of boneless options.
For that reason alone, my guys can get past having to pick at it, plus once they take a huge bite, they aren’t complaining about the bone. These spicy chicken thighs are packed with such delicious flavor and the meat is very moist. Don’t forget to make extras for some wonderful C.O.S.T. Cooking recipes later in the week.
To frequently achieve top taste in my 10 Minute Dinner recipes, I am all about a few choice all purpose seasonings, and Old Bay Seasoning is one of those that I remember fondly from my mother’s kitchen. Often associated with Seafood, you do NOT want to make the mistake of limiting it. It’s so delicious with meats, poultry and even sprinkled on salads. Recipe: Spicy Chicken Thighs
Summary: Packed with flavor, these spicy chicken thighs are a frugal, yet delicious and hearty meal.
Ingredients
- 3 to 6 T unsalted butter, softened
- 5 to 8 tsp Old Bay Seasoning
- 1 to 2 T lemon juice
- 2 to 4 bone-in, skin-on chicken thighs
- kosher salt
- ground black pepper
Instructions
- Preheat oven to 450°.
- Determine how many thighs you are going to prepare, and adjust above ingredients accordingly.
- In a small mixing bowl, beat together butter, Old Bay seasoning, and lemon juice.
- Rinse chicken thighs and pat dry with paper towels.
- Loosen the skin from the meat by gently slipping your fingers between the skin and the meat.
- Spread the butter mixture under skin of each thigh.
- Season thighs with salt and pepper.
- Roast chicken thighs in a 9×13 baking dish at 450° until skin is crispy and brown, and juices are running clear, about 35 to 40 minutes.
- Check the thickest part of the thigh with a thermometer, avoiding the bone. Thermometer should read 165°.
- Let stand for 10 minutes before serving.
* Spicy tip: Sprinkle some of the Old Bay Seasoning on the outside of the chicken skin instead of salt for an extra-spicy flavor.
